3lbs of Freshly picked Strawberries3lbs SugarJuice of 1 lemon

Strawberries - recipe

1, Simmer all the strawberries & lemon juice in a large pan for about 10 mins.

2, Add the sugar until dissolved and bring to the boil for about 5 mins (sometimes it does take longer!)

3, Put a small bowl/plate in the fridge & allow to go very cold so you can test to see if your jam is ready!
 
4, Drop a little of the cooking jam onto the plate every now and then, if it wrinkles up you know it is ready.

5, The fun bit is next when you empty your jam into as many jars as you can, put a little wax disc on top then put the lid on. I made 13 jars of jam full of rich strawberry goodness, the colour is fantastic, the smell is gorgeous !
